DAVID'S GRILLED BACON WRAPPED
OLIVES

I suggest using a charcoal grill instead of gas. It just gives these little devils a special touch. We have cooked them in the oven when it's been raining before, but it's just not the same.

pimento stuffed green olives (Queen)
good quality smoked bacon (any brand)
Tony's Creole seasoning (original)

Cut bacon in half. Wrap each olive with a half strip of bacon and secure with toothpicks. Arrange olives on an oven's broiler pan. Sprinkle each side of the bacon with the creole seasoning - the amount is up to you. Place broiler pan on grill over medium-high coals.

Note: We always put the olives on while the coals are heating up since this is an appetizer. You have to watch close, because the bacon can, and most likely will at some point, catch on fire due to the grease splatter. Don't fret about a little fire!! Just blow it out and continue to cook.

Turn olives after about 12 minutes of grill time and continue cooking.

Note: This is kind of a preference on doneness. It all depends on how you like your bacon cooked. My husband doesn't care, as long as it is done. However, I like mine just a bit charred (kind of like when you're gonna blacken chicken).

I hope you like the recipe! We make these every-time we have company over for supper.
