CHICKEN POT PIE 
1 chicken, cooked, deboned, and chopped, or 4 chicken breasts
1 can cream of chicken soup
2 c. broth
1/2 c. chopped onion
2 c. frozen mixed vegetables or peas and carrots
2 medium potatoes (cubed)
1 c. milk
1/4 stick melted butter
1 c. biscuit mix

Partially cook potatoes in microwave and set aside. Place cooked chicken in 9x15 inch casserole dish. Add cooked potato cubes and frozen vegetables. Mix and heat soup, broth and onion. Pour soup mixture over chicken and vegetables. In a small bowl, mix milk, melted butter, and biscuit mix. (You may want to use more biscuit mix and add milk until pouring consistency.) Pour batter over all ingredients in casserole.

Bake 1 hour at 350°F.

Since microwave ovens vary in power, you may need to adjust your cooking time.
