FRUIT COCKTAIL CAKE | |
1 1/2 c. sugar 1/2 c. vegetable oil 2 eggs 2 c. plain flour 1/2 tsp. salt 1 1/2 tsp. baking soda 1 lb. can fruit cocktail 1 sm. can coconut 1 stick butter 1/2 c. evaporated milk 3/4 c. sugar 1 tsp. vanilla 3/4 c. nuts Mix first 3 ingredients and add next 3 ingredients. Add undrained fruit cocktail and mix well. Pour into ungreased 14 x 9 x 2 inch pan. Sprinkle with coconut and nuts. Bake 40 minutes at 300 degrees. Combine butter, evaporated milk, sugar and vanilla; bring to boil and boil 2 minutes. Pour immediately over hot cake. Let cool in pan and cut into squares. |
