QUIK-MIX TWO-EGG CAKE 
2 1/4 c. flour
2 1/2 tsp. baking powder
3/4 tsp. salt
1 1/2 c. sugar
1/2 c. soft shortening
1 c. milk
1 tsp. vanilla
2 eggs

Sift together flour, baking powder, salt, and sugar. Put shortening into large mixer bowl and cream at #7 speed until just softened. Sift dry ingredients, add milk and vanilla and beat at #3 speed for 2 minutes. Scrape sides and bottom of bowl with rubber scraper frequently. Add eggs and beat at #5 speed for 1 minute. Spread batter into two 9 inch (1 1/4 inches deep) layer cake pans or one oblong pan (13 x 9 x 2 inches) greased and bottoms lined with waxed paper. Bake at 375 degrees for about 25 minutes for layers or 35 minutes for sheet cake. When cool, frost with Creamy Chocolate or any desired frosting.
