AUNT ESTHER'S CARAMEL CORN 
5 or 6 qt. popped popcorn
2 c. dark brown sugar
2 sticks butter
1/2 c. light corn syrup
2 tsp. cream of tartar
1 tsp. baking soda
Pinch of salt
1 tsp. vanilla (optional)

Preheat oven to 250°F. Bring all ingredients except popped corn and soda to a boil, stirring constantly. Boil without stirring for 5 minutes. Remove from heat and carefully add soda. Pour over the popped corn. Place in oven for 1 hour. Stir every 10 to 15 minutes. Yum!

Variation: Add 1 tsp. vanilla with soda.
