1 (3 oz.) box lime Jello
1/2 c. boiling water
1 c. pineapple juice
15 mini marshmallows
1 c. crushed pineapple
1 c. cottage cheese
1/2 pt. whipped cream
Chopped walnuts, if desired

Dissolved Jello in boiling water. Add pineapple juice and mini marshmallows. Stir until marshmallows are melted. Refrigerate until set; beat until foamy. Add pineapple, cottage cheese, and whipped cream. Mix in walnuts, if desired. Refrigerate until firm.
