ROAST BEEF SALAD 
3 1/2 c. sliced roast beef, diced
1 c. red onion
3 cloves garlic, diced
3/4 c. olive oil
1/4 c. red wine vinegar
Salt and pepper to taste

Mix roast beef with olive oil to coat. Mix with other ingredients. Store in covered container. Chill overnight.
