GAZPACHO SOUP 
4 c. V-8 juice
1/4 c. lemon juice
1 tsp. salt (or salt to taste)
2 med. garlic cloves (can be crushed garlic)
1/4 c. olive oil
2 c. fresh chopped tomatoes
1 c. chopped peppers
1 c. chopped cucumber
1/4 fresh chopped parsley
1 c. chopped celery
1/2 c. chopped onions
2 tbsp. fresh chopped chives
1/4 - 1 tbsp. dill (may use scallions)

If hot tangy flavor desired, use jalapeno pepper (to taste) or Tabasco to taste.

Mix first 5 ingredients in blender, medium speed 20 to 30 seconds just until broken down but not frothy. Mix gently together with other ingredients in bowl. Cover and chill several hours or best day before serving. Very refreshing on a hot summer day. I use this also for sausa sauce with taco chips, etc. cutting the V-8 to 2 cups, lemon to 1 tablespoon.
