RHUBARB CRISP 
1 c. flour
3/4 c. oatmeal
4-5 c. sliced rhubarb
1 c. cold water
1 tsp. vanilla
1 c. packed brown sugar
1/2 c. melted butter
1 c. sugar
2 tbsp. cornstarch

In bowl mix flour, brown sugar, oatmeal and butter. Press 3/4 of mix into bottom of 9"x9" pan. Cover with rhubarb.

In saucepan mix all remaining ingredients, cook over medium heat, beat, stirring constantly until thickened. Pour over rhubarb. Sprinkle remaining flour/oatmeal mixture on top.
