FRESH CORN ZUCCHINI RELISH,
CANNED
 
4 c. fresh corn
1 1/2 c. chopped onions
1 c. chopped red pepper
1 c. chopped green pepper
2 c. cider vinegar
1 1/2 c. sugar
4 tsp. salt
1 tsp. celery seeds
1 tsp. turmeric
1 tsp. mustard seed
1/2 tsp. dry mustard
3 med. sized zucchini, sliced 1/4 inch thick (4 c.)

In a large kettle, combine all ingredients except zucchini. Mix well. Simmer, uncovered, 20 minutes. Stir occasionally. Add zucchini and simmer 20 minutes longer. Put hot into clean, hot canning jars to within 1/4 inch of the tops. Wipe jar rims clean and adjust rims securely.
