COCONUT CAKE | |
1 pkg. yellow cake mix, Duncan Hines butter cake mix 1 sm. pkg. Jello vanilla instant pudding mix 1 1/3 c. water 4 eggs 1/4 c. oil 1 c. Angel Flake Coconut 1 c. chopped nuts Blend cake mix, pudding mix, water, eggs and oil in mixer bowl. Beat at medium speed of electric mixer 4 minutes. Stir in nuts and coconut. Pour into 3 greased and floured 9" layer pans. Cool in pans 15 minutes. Bake at 350 degrees for 35 minutes. Remove and cool on rack. Fill and top with Coconut Cream Cheese Frosting: 2 tsp. milk 1 (8 oz.) pkg. cream cheese 3 1/2 c. sifted powdered sugar 1 tsp. vanilla 1 c. Angel Flake coconut Cream cheese needs to be room temperature. Cream butter and cream cheese, add milk, and vanilla. Stir in coconut (1/2 cup). Spread on cake layers. Stack and sprinkle with remaining coconut. |
