BROCCOLI BEEF 
1/2 lb. twice ground beef
3 c. cooked broccoli, finely chopped
1/2 c. evaporated milk
1 egg, slightly beaten
1 can cream of chicken soup
1 c. cheddar cheese, grated
1 c. bread stuffing mix
3 tbsp. butter

Place ground beef in skillet and stir until brown; drain. Add broccoli, milk, egg and cream of chicken soup; mix well. Place beef mixture in lightly buttered casserole. Combine cheese, stuffing mix and butter and sprinkle over beef mixture. Bake at 350 degrees for 25 minutes. NOTE: May substitute asparagus, cauliflower, eggplant or zucchini for broccoli. Makes 4 servings.
