OVERNIGHT LAYERED CHICKEN
CASSEROLE
 
6 c. shredded lettuce
1/2 lb. bean sprouts
1 can water chestnuts, sliced
1/2 c. green onion, thinly sliced
1 med. cucumber, thinly sliced
4 c. cooked chicken
2 pkg. Chinese pea pods
2 c. mayonnaise
2 tsp. curry powder
1 tbsp. sugar
1/2 tsp. ground ginger
1/2 c. Spanish peanuts
1 doz. cherry tomatoes, halved

Layer lettuce, bean sprouts, water chestnuts, onions, cucumber, chicken and pea pods.

Sauce: Stir mayonnaise, curry powder, sugar and ginger; spread evenly over top. Refrigerate overnight. Before serving top with peanuts and tomatoes.
