GNOCCHI 
3 lb. potatoes, boiled with jackets
1 c. flour
1 egg
Spaghetti sauce
Grated cheese

Boil potatoes. Beat while hot and mash or put through ricer several times. Add egg and mix. Add flour and mix with hand until mixture forms a dough. You may need a bit more flour. Roll into long strips (like bread sticks). Cut into 1 inch size pieces and imprint with back of fork.

Drop into boiling salted water. When they rise to the top, remove and drain.

Place in bowl. Top with sauce and cheese.

Serves 4 to 6.
