SWISS STEAK 
2 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 lb. beef boneless bottom or top round, tip or chuck (1/2 inch thick)
1 tbsp. shortening
1 can whole tomatoes
1 med. chopped onion
1/2 c. green pepper, finely chopped

Mix flour, salt and pepper. Sprinkle one side of beef with half of the mixture. Pound in, turn beef and pound in remaining mixture. Cut into 4 or 5 serving pieces. Heat shortening in 10 inch skillet. Cook beef until brown over medium heat. Mix tomatoes (with liquid), onions and peppers, and pour over beef. Simmer for 45 minutes while covered.
