PUMPKIN ROLL 
3 eggs
1/3 c. pumpkin
1 tsp. baking soda
1 tsp. lemon juice
1 tsp. ginger
1 c. sugar
2 tsp. cinnamon
3/4 c. flour
1/2 tsp. salt

Combine ingredients and pour into jelly roll pan lined with chopped nuts. Bake at 350 degrees for 10 to 15 minutes. Dampen towel and sprinkle with confectioners sugar. Transfer baked jellyroll onto towel. Roll and cool on rack.

FILLING
8 oz. cream cheese
1 c. confectioners sugar
4 tbsp. butter
1 tsp. vanilla

Combine ingredients and beat. Unroll jelly roll and fill. Roll jelly roll.
