CHRISTMAS FRUIT CAKE 
3 c. Mission Cake Mix
1/2 c. fruit juice (grape, apple, guava, pineapple, or others)
1/4 c. molasses (see recipe for substitute)
4 eggs
1 1/2 c. raisins
1/2 c. chopped nut meats (whatever you have)
2 c. chopped glazed fruits (see recipe)

Measure the mix into a mixing bowl; add the juice. Beat 2 minutes. Add molasses and eggs; beat 2 minutes. Add raisins, nuts, and fruits. Stir by hand for 1 minute. Pour batter into either one large tube pan which has been lined with greased brown paper or wax paper, or bake in 2 loaf pans 3 1/2 x 8 inches. You can also make small muffin size cakes. Line all pans. Bake in a slow oven (275 degrees) about 2 1/2 hours for the big cakes; less time for the small ones. Test for doneness with a straw or toothpick.
