CHICKEN CACCIATORE 
4 lbs. chicken pieces or whole chicken, cut up
2 to 3 tbsp. flour
1/4 c. olive oil
2 tbsp. chopped onion
1/2 c. tomato paste
(1/2 c. dry white wine)
2 tsp. salt
1/2 tsp. white pepper
1 1/2 c. chicken broth
1 bay leaf
1/4 tsp. thyme
1 tsp. basil
1/4 tsp. marjoram
1 c. sliced mushrooms

Dredge chicken in flour and brown in olive oil with onions. Add remaining ingredients and simmer covered for 1 hour or until tender. Also very good cooked in crock pot on high for 4 or 5 hours. Serve with pasta.
