MICROWAVE RICE PUDDING 
1 1/3 c. quick cooking rice
1/2 pt. heavy cream
5 c. milk
1/2 tsp. salt
1/4 c. raisins (opt.)
3/4 c. sugar
3 eggs, well beaten
1 1/2 tsp. vanilla
Cinnamon to taste

In a large microwaveable baking dish, combine rice, cream, milk, salt, raisins and sugar. Microwave mixture on High setting of microwave for 10 minutes, stirring occasionally. Reduce microwave setting to Medium power and cook mixture for another 25 to 30 minutes, stirring occasionally, until rice is soft. While mixture is still hot, add eggs and vanilla and mix well. Let cool. Sprinkle cinnamon as desired. Chill thoroughly. Mixture will thicken as it cools.

Since microwave ovens vary in power, you may need to adjust your cooking time.
