COFFEE BLOND BROWNIES | |
1 lb. dark brown sugar 2 tbsp. instant coffee 2 eggs 1/2 tsp. salt 1 c. chopped pecans 1 c. semi-sweet chocolate bits 3/4 c. butter 1 tbsp. water 2 tbsp. vanilla 2 tsp. baking powder 2 c. unbleached flour Heat butter and brown sugar on low heat until butter is melted. Dissolve coffee in water and add to the butter and brown sugar mixture. Preheat oven to 350 degrees and grease an 8 x 11 inch baking pan. When butter mixture cools, beat in the eggs and vanilla with a mixer. Sift flour, baking powder, and salt. Mix into butter mixture in 3 parts. Add chocolate chips. Spread thick mixture in pan. Sprinkle pecans on top, then bake for 25 to 30 minutes. DO NOT OVERBAKE. Cool; cut into squares. Serve or freeze. |
