COOKIES FOR A CROWD 
1/2 c. butter
1 1/2 c. granulated sugar
1 1/2 c. brown sugar, firmly packed
4 eggs
1 tsp. vanilla
1 (18 oz.) jar chunky peanut butter
2 1/2 tsp. baking soda
1 (18 oz.) box oatmeal, uncooked
8 oz. shredded coconut

In large mixing bowl, beat together butter and sugars. Blend in eggs and vanilla. Add peanut butter, mix well. Press lumps out of baking soda; combine with oats. Add oat mixture to peanut butter mixture; mix well. Form dough in balls size of walnuts, place on ungreased cookie sheet. Flatten with fork. Bake 10-12 minutes at 325 degrees.

NOTE: Dough will be stiff so you may want to mix and shape with hands. Keep well. Can be frozen.
