STUFFED MEATLOAF | |
2 lb. ground chuck 1/2 c. bread crumbs or cracker crumbs 1-2 eggs 1/4 c. tomato sauce or ketchup 1 med. onion 1/4 c. green peppers and black olives 1/4 mushrooms 1/2 c. shredded Mozzarella cheese Mix ground chuck, bread crumbs, eggs, onion, tomato sauce in medium bowl. Divide into 2 equal parts. Lay 1/2 of meat mixture in bottom of meatloaf pan. Scoop out the middle of the meat and replace with mushrooms, green pepper, black olives, top with cheese keeping these ingredients into the valley of meat. Top with remaining meat and squeeze layers together. Bake at 375 degrees for 45-60 minutes. |
