FRESH NECTARINE COBBLER | |
The abundance of fresh summer fruit provides the opportunity for varying this Fresh Nectarine Cobbler. Because nectarines are fuzz- free, they need not be peeled for this dish. Just slice and blend with nutmeg, lemon juice and rind before scattering over the batter. The cobbler is best when served the day it is made. Preparation time: 25 minutes. Baking time: about 45 minutes. Oven temperature: 375 degrees. FOR 1 COBBLER, 6 TO 8 SERVINGS, YOU WILL NEED: 1 1/2 c. all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 1 c. sugar 1 egg, beaten 3 tbsp. butter, melted 1 c. milk 5 to 6 nectarines, sliced Juice & rind of 1 lemon 1/2 tsp. vanilla extract 1/4 tsp. nutmeg 1 c. sugar 1 c. water 1. In a large bowl, mix together flour, baking powder, salt and the 1 cup of sugar. 2. In a separate bowl, combine the egg, butter and milk. Stir into the first mixture, mixing until well combined. Pour into a buttered 1 1/2 quart shallow baking dish. 3. Combine the nectarines with lemon juice, lemon rind, vanilla and nutmeg. Spread over the batter. 4. Combine the sugar and water. Pour over the fruit (batter will rise to the top as it bakes). 5. Bake at 375 degrees about 45 minutes. Cool before serving. TIPS: Use boysenberries, sliced peaches or apricots in place of the nectarines, if you wish. Frozen fruit or berries can be substituted if fresh is not available. |
