FRESH PEACH COBBLER 
1/2 c. brown sugar, packed
1 tbsp. lemon juice
1 1/4 c. flour
1/4 c. butter
1/4 c. granulated sugar
1 c. milk
1/2 tsp. cinnamon
4 c. peeled, sliced peaches
1 tbsp. baking powder
1/2 tsp. vanilla
1 egg, lightly beaten

Lightly butter an 8-cup baking dish. In a large bowl, combine brown sugar, cinnamon and lemon juice. Mix well. Add peaches and toss to mix. Transfer to baking dish.

Combine flour and baking powder. In mixing bowl, cream butter and granulated sugar until light and fluffy. Beat in egg. Add dry ingredients alternately with milk. Add vanilla, mixing just until combined. Drop batter by spoonsful over peach mixture.

Bake in 375 degree oven for 25 to 35 minutes or until peaches are tender and top is golden brown. Serve warm.

Makes 8 servings.

This was, quite simply, the best Peach Cobbler I have ever had. The filling was super tasty but not too sweet. The crusty top is light and fluffy and is a perfect compliment to the filling. It was also super easy to make. I will definitely be making it again (and again)

Made this cobbler tonight, added 1 cup blueberries along with the peaches. Very light and good. Really liked it does not have alot of butter and sugar, but tasted like it did.
