HONEY FROSTING 
4 egg whites
Dash of salt
1 c. honey

Beat egg whites with salt until soft peaks form. Pour honey in fine stream over egg whites continuing to beat. Beat 10 to 15 minutes, longer for stiff peaks. Grated orange or lemon peels may be added to frosting or beat in teaspoon of lemon juice with honey. Makes 4 cups.

This frosting is delicious on peach cupcakes. I made some yesterday, and stored the leftovers in a Tupperware container. However, this morning I found the frosting deflated and foamy - nothing like the beautiful shiny white frosting from yesterday. What did I do wrong? How do I keep the cupcakes looking beautiful?

This is a beautiful sugar free gluten free frosting substitute!!! It adds just the perfect sweetness to the cake :)) I put I tsp of vanilla instead of orange or lemon and it was beautiful and did not deflate. I think you just have to make sure the egg whites are a true foam before adding the honey. AWESOME frosting!!!!! Thank you!!
