SPICED APPLE MUFFINS 
2 c. self-rising flour
1/2 c. sugar
2 tbsp. light brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. finely chopped, peeled apples
1 egg, beaten
3/4 c. milk
2 tbsp. melted shortening

Combine first 5 ingredients. Stir in apples. Blend egg, milk and shortening and add to flour mixture. Stir only until flour is moistened. Fill greased muffin cups 2/3 full. Bake at 425 degrees for 30 minutes. Make 1 dozen muffins.
