SPINACH, BACON AND APPLE SALAD 
6 slices bacon
1/2 c. sliced almonds
1 Red Delicious apple, unpeeled, cored and chopped
8 c. spinach, rinsed, stemmed and torn into pieces
4 green onions. sliced

DRESSING:

1/4 c. vegetable oil
3 tbsp. red wine vinegar
1 tsp. sugar
1/2 tsp. prepared mustard
Salt and ground black pepper to taste

In lidded jar, combine all dressing ingredients. Shake well and refrigerate.

In skillet, cook bacon until crisp. Drain on paper towel; crumble. In same skillet, cook almonds in one tablespoon bacon grease. Shake over high heat until brown. In large bowl, combine spinach with bacon, almonds, apple and onion. Toss with dressing. Suggestion: Serve dressing on side and use as much or little as you like.
