LOMI SALMON* 
1 lb. fresh salmon
5 large ripe, peeled tomatoes, diced
1 medium onion, chopped finely
1 bunch green onions, sliced thinly, including green tops
1/2 c. granulated coarse salt

Soak salmon in cold water and salt for 3 hours. Remove skin and bones of salmon, then shred finely. Combine remaining ingredients and chill mixture. Just before serving, add several cubes crushed ice.

Serve in a chilled dish as a condiment to enhance meat dishes or dishes served with rice or poi.

Yields about 6 servings.
