SOLE & ASPARAGUS WITH CHEESE
SAUCE
 
10 oz. pkg. frozen asparagus spears
4 (4 oz.) sole or flounder fillets
1 tbsp. butter
2 tbsp. dry white wine
1/2 tsp. salt
2 oz. cheddar cheese, grated, 1/2 c.
1/2 c. cream or milk
1 tbsp. flour
1/8 tsp. ground red pepper

Remove wrapping from box of asparagus. Place box in microwave and heat on 30% power 2 minutes or until easily separated. On narrow end of each fish fillet, place 1/4 of asparagus spears; roll up. Place in shallow 2 1/2 quart casserole; dot with butter. Cook, covered on high 4 to 6 minutes, rearranging fillets once. Remove fillets to platter; keep warm. Into liquid in casserole, whisk cream, wine, flour, salt and pepper. Cook on high 3 to 4 minutes until slightly thickened, stirring twice. Stir in cheese. Cook on high 1 minute; stir until smooth. Pour over fillets. If you like, garnish with cooked shrimp. Makes 4 main dish servings, about 225 calories per serving without shrimp.

Since microwave ovens vary in power, you may need to adjust your cooking time.
