VEGETABLE SALAD 
1 pkg. lemon or lime sugar free Jello
3/4 tsp. salt
1 c. boiling water
3/4 c. cold water
1 tsp. vinegar
2 tsp. grated onion
Dash of pepper
3/4 c. finely chopped cabbage
3/4 c. finely chopped celery
1/4 c. finely chopped green pepper

Can also use cauliflower, carrots, green olives, etc.

Dissolve Jello and salt in boiling water. Add cold water. Add vinegar, onion and pepper. Chill until very thick. Then fold in vegetables. Pour into a 1 quart mold and chill until firm. This recipe can be doubled. It's also a great low fat recipe.
