STUFFED MANICOTTI 
1/2 lb. ground beef
1/4 c. minced green onion
1 tsp. salt
1/4 tsp. pepper
1 c. chopped cooked spinach
1/2 lb. ricotta cheese
2 1/2 c. Mozzarella cheese, grated
1 egg, beaten
1 tsp. dried parsley
1 (8 oz.) pkg. manicotti noodles

SAUCE:

1 lg. jar favorite spaghetti sauce

Cook ground beef, onion, salt, and pepper. Also cook spinach. Drain and cool both. Combine ricotta, 2 cups Mozzarella, egg, parsley, spinach, and beef. Prepare manicotti according to package directions. Drain. Fill tubes with mixture. Pour 1/3 of the sauce into 9 x 13 inch baking dish; place the stuffed noodles seam side down in single layer. Cover with remaining sauce and Mozzarella cheese. Bake covered at 350 degrees for 30-40 minutes. Makes 14 noodles.
