WATERMELON PICKLES 
4 lbs. watermelon rind (white only)
2 tbsp. allspice
1 1/2 qts. vinegar
1 lemon, sliced thin
Lime water
Cloves
10 (2 inch) pieces cinnamon sticks
1 qt. water
1 1/2 lbs. sugar

Soak rind for 1 1/2 hours in lime water made with 2 quarts cold water and 2 tablespoons Lime of Calcium Oxide. Drain. Cover with fresh water and cook until tender, about 1 1/2 hours, adding more water as needed. Let stand several hours or overnight. Drain. Put spices in cheesecloth. Bring to a boil with vinegar, sugar, lemon, and water. Add rind and cook slowly for 2 hours.
