PUMPKIN CRANBERRY NUT BREAD | |
3 1/2 c. flour 2 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 1/2 tsp. baking powder 2 tsp. grated orange rind 3/4 c. butter, softened 2 c. sugar 3 eggs 1 (16 oz.) can pumpkin 1 c. nuts 1 c. chopped cranberries Preheat oven to 350 degrees. Combine dry ingredients. Set aside. Cream butter and sugar. Add eggs one at a time, mixing after each addition, alternate pumpkin and dry ingredients. Stir in nuts and cranberries. Pour into two greased loaf pans. Bake for one hour or until done. |
