BANANA BREAD 
2-3 ripe bananas, mashed
1 c. uncooked rolled oats (preferred over "instant" oats)
1/2 c. milk (skim milk preferred)

Preheat oven to 350 degrees. In a bowl mix above ingredients, let stand. In a second bowl cream together:

1/2 c. applesauce
1/2 c. egg substitute
6 oz. (by weight, not packed) brown sugar

2 c. all purpose flour
1 tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves

Mix in the banana/milk/oats. Optional: Mix in 1/2 cup raisins if desired or sprinkle tops of muffins with coarsely chopped nuts for a little texture. Pour batter into greased and floured 9 1/2" x 5" x 3" pan. Bake at 350 degrees for 1 hour.

If using mini muffin pans, bake for 8 to 9 minutes or until tops spring back; for small loaf pans check after 20 minutes or so.
