JALEPENO CHICKEN 
Hen
1 onion
2 tbsp. butter
1 can cream of mushroom soup
1 1/2 c. chicken broth
2 jalapeno peppers, dice
Corn tortillas
1 lb. cheddar cheese

Boil hen with season salt. Let cool and remove meat. In skillet, brown the onion with the butter. Add soup, broth, peppers, and chicken. Layer the tortillas, chicken mixture, and cheese. Bake at 350 degrees covered for 30 minutes.
