GREEN RELISH 
4 c. onions
4 c. cabbage
4 c. green tomatoes
12 green peppers
6 sweet red peppers
1/2 c. salt
2 pods hot pepper (if desired)
6 c. sugar
1 tbsp. celery seed
2 tbsp. mustard seed
1 1/2 tsp. turmeric
4 c. vinegar
2 c. water

Grind vegetables, using coarse blade. Sprinkle with salt; let stand overnight. Rinse and drain. Combine remaining ingredients; pour over vegetable mixture. Heat to boiling. Simmer 3 minutes. Seal in hot, sterilized jars. Makes 8 pints.

Mixed pickling spices tied in a thin cloth may be used instead of those listed. This keeps the spices from being in the jars of relish.
