THE OLIVER'S FAVORITE WAFFLES | |
4 eggs 2 c. sifted all-purpose flour (sift before measuring) 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 2 c. buttermilk: or 1 c. dairy sour cream mixed with 1 c. milk 1 c. melted butter 1. Preheat waffle iron. 2. Beat eggs until light. 3. Sift together flour, salt, soda, baking powder. 4. Add flour mixture and buttermilk alternately to beaten eggs beginning and ending with flour mixture. Add melted butter, blending thoroughly. 5. For each waffle, pour into center of lower half of waffle iron until it spreads to inch from edge - about 1/2 cup. 6. Lower cover on batter: cook as manufacturer's directions, or until waffle iron stops steaming. Do not raise cover during baking. 7. Carefully loosen edge of waffle with fork: remove and enjoy with butter and syrup. Makes 8 waffles. |
