WHITE CHERRY NUT BREAD 
1 1/2 c. sugar
1/2 c. shortening
1 egg, beaten
4 c. flour
4 tsp. baking powder
Pinch of salt
1 1/2 c. milk
1 c. nut meats, cut fine
10 maraschino cherries, cut in pieces
Flour to coat cherries

Cream sugar and shortening. Add egg. Sift flour, baking powder and salt together. Add milk and flour mixture alternately until blended. Mix a little flour with cherries so they will stay all through the mixture of dough. Add nuts and cherries, reserving a few cherries to put on top. Pour into 2 greased loaf pans. Add reserved cherries on top. Bake 1 hour at 350 degrees, or until done.

DIETITIAN'S NOTE:

Nuts are high in fat, but a good source of protein. Since they are a key ingredient, reduce to only 3/4 cup. To further reduce fat and cholesterol, use skim milk and substitute 7 tablespoon canola, corn, safflower or sunflower oil for the shortening.
