HUMMINGBIRD CAKE 
3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
2 c. sugar
1 tsp. salt
3 eggs, beaten
1 c. vegetable oil
1 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple, undrained
1 c. chopped nuts
2 c. chopped bananas

Combine first 5 ingredients in large bowl; add eggs and oil, stirring until dry ingredients are moist. Do not beat! Stir in vanilla, pineapple, nuts, and bananas.

Spoon batter into 3 greased and floured pans. Bake at 350 degrees for 25-30 minutes. Cool in pans 10 minutes. Remove and cool. Spread frosting between layers and top. Sprinkle 1/2 cup nuts on top.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1/2 c. butter, softened
1 (16 oz.) pkg. powdered sugar, sifted
1 tsp. vanilla

Combine cream cheese and butter, beating until smooth. Add powdered sugar and vanilla. Beat until light and fluffy.
