SMALL CHEESE CAKES 
1 (8 oz.) pkg. cream cheese
1 lg. egg
1 1/2 c. sugar
1/2 tsp. almond extract
3 tbsp. vanilla wafer crumbs
3 tbsp. cherry or strawberry jam

Preheat oven to 375 degrees. In a large bowl, mix cream cheese, egg, sugar and extract. Beat until fluffy. Line muffin pan with baking cups. Put one teaspoon of vanilla wafer crumbs in bottom of each cup. Press down and fill with cream cheese mixture. Top each with jam. Bake for 10 minutes. Serves 12.
