SWEDISH MEATBALLS | |
1 lb. hamburger 1/4 lb. Jimmy Dean sausage 1 1/2 c. soft bread crumbs, 3 slices 1 c. light cream (milk is okay, too) 1/2 c. chopped onion 1 tbsp. butter 1 egg 1/4 c. parsley flakes 1 1/2 tsp. salt 1/4 tsp. ginger Dash of pepper Dash of nutmeg GRAVY: 2 tbsp. butter 2 tbsp. flour 3/4 c. beef bouillon 1/4 c. cold water 1/2 tsp. instant coffee Mix meats together real well. Soak bread in milk until soft. Cook onion in 1 tablespoon of butter until tender but not brown. Combine meats, bread crumbs, onion, egg, parsley and seasoning. Mix together real well. Form together in 1 1/2 inch balls. Mixture will be soft. Wet hands to handle better. Brown slowly in pan not too many at once. Shake skillet to keep balls round. Remove meatballs from pan. Stir flour into drippings in pan. Add beef bouillon in 3/4 cup of water to pan. Add coffee. Heat and stir until gravy thickens. Return meatballs to gravy. Cover and cook slowly about 30 minutes, basting occasionally. |
