ROASTED CHICKEN 
1 whole roaster or fryer
Whole lemon
Salt and pepper

Preheat oven to 425 degrees. Rinse and pat chicken dry. Pierce lemon at least 12 times with fork or knife and place in chicken body cavity. Season chicken with salt and pepper (do not butter or baste skin). Bake for 1/2 hour, lower heat to 375 degrees and bake until done, about 45-60 minutes or until juices run clear and leg meat is no longer pink.
