RED EARTH CAKE 
1/2 c. shortening
2 c. flour
1 1/2 c. sugar
1 c. buttermilk
1 tsp. red food coloring
2 tbsp. hot coffee
1 tsp. vanilla
1 egg
1 tsp. salt
1 tsp. baking soda
4 tbsp. cocoa

Cream shortening and sugar. Add egg and cream, then add hot coffee. Combine buttermilk and soda. Pour in alternately with flour, salt, cocoa and add vanilla. Bake at 350 degrees.

ICING:

2 egg whites
1 c. sugar
1/3 c. water
1 tsp. white Karo syrup
1/3 tsp. salt

Boil until soft ball stage. Beat 2 egg whites and add to mixture and vanilla.
