CAROLE'S SPICED APPLESAUCE
WALNUT MUFFINS
 
Great take along on trips!

2 c. buttermilk baking mix
1 tbsp. sugar
1 1/4 tsp. ground cinnamon
1 jar (8 oz.) sweetened applesauce
3 tbsp. water
1 egg
1/2 c. chopped walnuts

Preheat oven to 375°F. Grease muffin pan. Mix baking mix, sugar, cinnamon. In separate bowl, mix applesauce, water, eggs. Add to dry mixture along with walnuts. Stir just until moistened. Fill muffin pan 1/2 full, bake until golden, about 20 to 25 minutes. Serve warm, cold or on the run.

Makes 12.
