OLD COUNTRY QUICHE 
1 pie crust
1 tsp. butter
6 slices bacon
8 oz. shredded Swiss cheese (2 c.)
2 tbsp. flour
3 large eggs
1 c. milk
1/4 tsp. salt
1/8 tsp. nutmeg

Bake a single crust pie shell at 400°F for 15 minutes. Melt butter and set aside. Fry bacon crisp. Put cheese and flour with bacon; toss and add butter. Spread in pie crust. Whisk eggs, milk, salt and nutmeg. Pour over cheese and bacon.

Bake at 400°F for 35 minutes or until center is set.
