GREEN BEAN SALAD | |
1 lb. fresh green beans 3 tbsp. olive oil 3 tbsp. fresh lemon juice 2 cloves garlic (minced) 1 shallot (minced) 2 tbsp. red pepper (minced) 1 tbsp. dill (minced) 1/8 tsp. dry mustard 1/4 tsp. salt 1/8 tsp. freshly ground black pepper Wash and trim ends of green beans but leave whole. Cook the beans in boiling water for about 5 minutes (they should still be crisp). Refresh immediately in cold water, drain and set aside. Combine all remaining ingredients and mix well. Pour over beans and refrigerate 1 hour before serving. Best served cool, not cold. |
