THIMBLE COOKIES | |
1 c. butter, softened 1/2 c. granulated sugar 4 egg yolks 1 tsp. vanilla extract 2 c. flour Jam or jelly - I always make half apricot and half likvar which is prune filling Cream butter and sugar. Add egg yolks and vanilla and beat until light and fluffy. Stir in flour and chill until firm enough to handle. With floured hands, roll in 1 inch balls. Put 1 1/2 inches apart on cookie sheets. Using a lightly floured thimble make an indentation in center of each cookie and fill with jam. Bake in preheated oven at 325 degrees about 25 minutes. Cool on rack. Makes 4 dozen. |
