CZECHOSLOVAKIAN CHICKEN WITH
DUMPLINGS
 
2 1/2 lbs. chicken, cut up
2-3 tbsp. Crisco
1 tsp. salt
1-2 c. water
2-3 tbsp. flour
1/2 pt. sour cream
Paprika

Disjoint chicken into serving pieces. Brown in shortening. Add water to cover and salt. Simmer. Cook about 45 minutes or until done.

In the meantime, make dumplings. When done, remove chicken. Thicken gravy with flour, and add sour cream and paprika. Add dumplings. This can be frozen and reheated.

DUMPLINGS:

35-40 saltines, rolled fine
1/4 c. finely chopped blanched almonds
1 egg
2 tbsp. butter, melted
1/2 c. milk

Mix saltines and almonds with butter, egg, and milk. Make into walnut-size balls and drop into boiling water. Cook 15 minutes.
