EASY CARROT CAKE 
2 c. sugar
1 c. vegetable oil
4 eggs
2 (4 1/2 oz.) jars strained baby food carrots
1 tsp. vanilla
2 c. all purpose flour
1/2 tsp. salt
1 1/2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves
1 1/2 c. chopped pecans

Combine sugar and oil; beat well. Add eggs, carrots and vanilla; beat until smooth. Combine the next ingredients, add to cream mixture; beat well. Bake in 2 (9") round pans or 9"x13" long pan at 350 degrees for 30 minutes or until done.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese
1/2 c. butter, softened
1 tbsp. vanilla
1 box powdered sugar
1 1/4 c. chopped pecans

Cream the cheese and butter together with the vanilla and blend well. Then add the powdered sugar; mix well; then add the pecans.
