ITALIAN DOUGHNUTS 
1 c. sugar
5 c. flour
1/4 tsp. salt
2 tsp. double acting baking powder (4 if regular)
6 eggs, well beaten
1/2 c. soft butter
3 tbsp. milk
1 tsp. vanilla
1/2 tsp. grated lemon rind

Into 2-quart bowl put sugar, flour, salt and baking powder. Add eggs, butter, milk, vanilla, lemon extract and rind. Mix until smooth. On well-floured surface roll dough 1/2-inch thick. Cut with doughnut cutter. Place about 1-inch apart on a lightly greased and floured cookie sheet. Bake at 400 degrees for 13-16 minutes or until a golden color. Cool.

ICING:

2 1/2 c. sifted confectioners sugar
3 1/2 tsp. lemon extract
5 tbsp. heavy cream

Beat ingredients until smooth.
